Meatballs with Krokos

INGREDIENTS
  • 500gr mixed beef and pork mince
  • 3 slices stale bread
  • zest from 1 lemon
  • 4 tablespoons chopped bacon
  • ¼gr Krokos Kozanis (saffron)
  • 2 eggs
  • ¼ teaspoon paprika
  • some thyme
  • salt and pepper
  • flour and oil for frying
INSTRUCTIONS

Beat the eggs with the spices and the Krokos Kozanis (saffron). Chop the bread in a blender and pour it on the eggs. Sauté the bacon in a frying pan and when ready, mix it with the mince and the lemon zest. Add the eggs with the bread and knead the mixture. If it’s liquid, add some more bread. Leave the kneaded mixture 2-3 hours in the fridge, knead the meatballs, batter them and fry in sunflower oil.
