Onion Soup

Onion Soup with Krokos Kozanis

  • 1/2 a teaspoon of Krokos Kozanis (saffron) threads
  • 6 cups chicken broth
  • 3 medium-sized onion cut in rings
  • 1 cup cream
  • 3 medium-sized potatoes cut in cubes

Soak the saffron in hot water for 30-40 minutes. Simmer the onions for 5-6 minutes until they become transparent. Add the potatoes and the chicken broth and simmer for another 25-30 minutes until soft.

Beat them in the blender and add the cream and the saffron with its water. Heat the soup before serving but do not let it boil. Serve garnished with some more cream
